laughing my butt off

It's been four months since I gave birth and I still haven't seen the inside of my pre-pregnancy jeans. I know, it took nine months to pack it on; I should give myself nine months to get it off. But I'm not one for having a lot of patience. Since I'm still nursing I can't cut way back on the calories, but I have found little ways here and there to help me eat a bit healthier. I made one of my latest discoveries at the local Neighborhood Market.

How many of you have seen the round case of Laughing Cow cheese? You can't miss it. It's the package with the big red cow--complete with cheese wheel earrings--on the front. Inside are those little foil-wrapped wedges of creamy Swiss cheese. They have a light version which I've used on sandwiches, but it was always a little tricky to spread on that crappy light bread (the stuff that falls apart if you look at it funny). Well, last trip I discovered a new item from Laughing Cow--a tub of Light Creamy Swiss spread. This stuff is fantastic! Not only is it very low-cal, it spreads easily on your favorite wheat bread.
Shake things up a bit by toasting the bread first.

You'll no longer experience gaping holes in the middle of your sandwich. Plus you've saved on calories, so go ahead and add on that extra slice of avocado. Don't worry, avocadoes are a healthy addition to any sandwich.

One non-guilty indulgence a day is about all I can handle. They aren't nearly as much fun as guilty ones. Chocolate truffle versus cheese spread? Truffle wins every time.
